After several years of determined work, we have developed one of the best olive oils in the world. Everything began with the olive oil for us! We were in awe when we looked out across the olive groves of hundreds of beautiful trees have stood on these Tuscan slopes for so many years! Bringing in the harvest almost feels meditational as everyone helps one another pick and box the olives in preparation for the olive mill. A few hours later we are blessed with the fruits of this labor; organic, cold-pressed extra virgin olive oil. Amazing! This bottle holds 0.25l.
The oil is produced from 100 % organically grown olives from our fields in Tuscany. The oil is a composite of the Frantoio, Moraiolo and Leccino variants. All the olives are harvested by hand and are pressed the same day they are picked. The nutritional benefits of olive oil are among the best in the world. Five kilos of olives are needed to produce each of our half-liter bottles of olive oil. This represents the average yield of a single tree, but there is great variance between the trees with some yielding as much as 50 kilos and others practically nothing. Our oil is produced without any additives or preservatives. What it takes is love – and a good deal of elbow grease. A good olive oil – ours included – should be stored in a dark and cool place to retain its best qualities. When stored in such a way, the oil has a shelf life of over a year.
